1/4 c. fresh squeezed orange juice
1/4 c. fresh squeezed lemon juice
1/4 c. minced shallots
1 T. honey
1/2 c. good olive oil
1 tsp kosher salt
1/2 tsp. freshly ground black pepper
6 c. arugula, washed and dried
1/8th seedless watermelon, rind removed and cut into 1 inch cubes
12 oz. good feta cheese, 1/2 inch diced
1 c. (4 oz.) whole fresh mint leaves

Directions:
Directions:
Whisk together orange juice, lemon juice, shalots, honey, salt and pepper. Slowly pour in olive oil, whisking constantly to form an emulsion. If not using within 1 hour, store covered in fridge.
Place arugula, watermelon, feta and mint in bowl and drizzle with enough vinaigrette to coat greens lightly.
