2 cups water
1 cup quick oats
3 Tablespoons butter
1 pkg dry yeast
1/3 cup warm water
1/3 cup brown sugar
1 Tablespoon sugar
1 1/2 teaspoons salt
1 3/4 - 5 1/4 cups all-purpose flour

Directions:
Directions:
In a saucepan boil 2 cups water and then add oats and butter, cooking for 1 minute. Remove from heat and cool to lukewarm.
In a mixing bowl, dissolve yeast in 1/3 cup warm water to proof. Add the oat mixture, sugars, salt and 4 cups of flour. Beat until smooth. Add enough flour to form soft dough. Knead until smooth (about 8 min) or let a heavy duty mixer do this for you.
Place in a greased bowl, turning once. Cover and let rise 1 hour. Punch dough down; allow to rest 10 minutes.
Shape into 18 balls. Place in two greased 9" round baking pans. Cover and let rise about 45 min. Bake at 350* for 20-25 min. or until golden brown. Remove from pans to cool on wire racks.
