1/3 cup apple juice
3 tbsp firmly packed brown sugar
3 tbsp. maple syrup
2 tbsp. dark molasses
1/8 tsp. ground cinnamon
1/8 tsp. allspice
3 lbs. yams or sweet potatoes, peeled and cut into pieces 1/2 inch thick diagonal slices.
salt and pepper to taste

In a rimmed 10 X 15 baking dish, combine the apple juice, brown sugar, syrup, molasses, cinnamon and allspice.
Turn the yams in mixture to coat, then arrange in a single layer, you can overlap slightly.
Cover tightly with aluminum foil and bake at 375º for 20 minutes.
Turn the yams over then continue to bake, covered until very tender when pierced. (About 25 minutes).
Uncover the yams and bake another 15 minutes.
Turn the yams over and bake until only a thin layer of syrup remains in the bottom of the pan. (About another 4 minuets).
Arrange yams on a serving dish, scrape syrup from the pan and drizzle over the yams.
Season to your taste with salt and pepper.
