1 quart milk
1/2 cup cream
2/3 cup uncooked rice
1 egg beaten
1 tsp. vanilla
3/4 cup sugar
dash of salt
1 pint ligonberries

Directions:
Directions:
Heat the milk and cream to boiling.
Add the rice.
Cook over low heat for 1 hour or until the rice is done. Stir often.
Combine the egg, vanilla, sugar and salt. Add to the rice.
Cook 4 to 7 minutes over low heat.
Put the rice in a large bowl and refrigerate for at least 45 minutes prior to serving.
Garnish each serving with a serving on ligonberries.

To make the ligonberries, cook them over low heat with sugar to taste. They will pop like cranberries when they are ready. You may need to add a very small amount of water.

This is a typical Swedish pudding served on Christmas Eve. It is a part of our Christmas tradition.
It's important to get REAL ligonberries and they may be hard to find in your super market. (Do NOT use ligonberry jam). Nordic House in Oakland almost always has ligonberries and they can ship. Their web page is www.nordichouse.com. (They also carry awesome herring!)
