1 bowl full of root vegetables: Sweet potato, squash, leeks, parsnips, carrots, potatoes, Brussels sprouts, sweet onion ... whatever you like

2 Tablespoons olive oil
1/4 teaspoon of crushed rosemary
Salt/pepper to taste

Heat oven to 375*
Cut the vegetables into similar sized pieces, making carrots thinner.

Coat the vegetables with the oil, salt/pepper and rosemary and bake on a large cookie sheet with sides for 30 min. Stir and bake another 20. Then check to see if they are tender. If not, you can cover with foil for another 10 min.
