8 cups fresh rhubarb (chopped into 1 inch pieces)
3/4 cup sugar
1 tsp. vanilla
2 tbsp. unsalted butter, cut into pieces
1/4 cup heavy cream

Directions:
Directions:
Preheat the oven to 375º.
Butter a large baking dish and place rhubarb pieces into the dish.
Sprinkle on the 1/2 cup of sugar and allow to stand for 30 to 45 minutes.
Pour in the remaining sugar and dot top with butter chunks and vanilla.
Bake for 20 minutes.
Pour cream over the mixture and allow to bake another 5 minutes.
Serve warm or cold
