"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
6 boneless skinless chicken breasts
4 tbsp minced garlic
8 - 10 cloves fresh garlic, coarsely chopped
2 lemons
pure olive oil (not extra virgin)
flour
2 tbsp onion powder
2 tbsp garlic powder
1 tbsp white pepper
2 tbsp dried oregano
3 tbsp dried parsley

Directions:
Directions:
Combine onion powder, garlic powder, white pepper, oregano, and parsley, mix well and set aside.Slice each breast in half lengthwise. Dredge chicken breasts in flour and set aside. Zest both lemons and set aside. Pour 1/4 inch olive oil into frying pan. Heat the oil for 1-2 minutes over medium high heat. Add the minced and fresh garlic to the oil and stir. Cook the garlic 1-2 minutes. When oil starts to bubble, carefully place each piece of chicken in the pan. The pan will be crowded, and this is needed. Cook over medium high heat until oil starts to bubble again. Sprinkle chicken liberally with seasoning mixture. Cook for 3-4 minutes. Turn chicken pieces carefully - pieces of golden brown garlic should be stuck to the bottom...this is good. Sprinkle chicken pieces liberally again with seasoning mixture. Cook chicken for 3-4 minutes, then carefully turn again. Sprinkle reserved lemon zest over chicken pieces. Then cut one of the lemons in half and squeeze one of the halves over the chicken pieces, making to get some juice on each piece. Sprinkle with the seasoning mixture again. Cook for 3-4 minutes, then turn chicken again. Using the other lemon half, sprinkle this side with juice. Continue to cook for 8-10 minutes. Remove from pan and drain on paper toweling.
