1 generous cup superfine sugar
2 1/2 cups of water
2 fresh limes,grated rind and juice
1 small medium pineapple,quartered & chopped
- You can also have the pineapple,cut out the flesh and use the shell as an attractive way to serve the sherbet
Sweet coconut cookies to serve

Directions:
1. Put the sugar and water into a pan and heat gently,stirring until the sugar is dissolved. Bring to a boil and let simmer for 10 minutes.

2. Stir in the grated rind and half the lime juice. Remove from heat and let cool.

3. Put the pineapple flesh in a blender or food processor and process until smooth. Add to the cold syrup with the remaining lime juice. Pour into freezer-proof container and freeze until crystals have formed round the edge.

4. Turn out the sherbet into a bowl. Beat well with a fork to break up the crystals. Return to the freezer and freeze overnight. Serve in the pineapple shells with sweet coconut cookies.
