Cake:
1 pkg white cake mix
3 eggs
1 pkg instant pistachio pudding mix
1 c oil
1 c club soda

Topping:
2 envelopes Dream Whip
2 pkg instant pistachio pudding mix
2 c milk
1 c pecans (optional)

Directions:
Directions:
Preheat oven to 350º. Put all cake ingredients in a large bowl. Mix at medium speed for 3 1/2 minutes. Pour into two greased and floured round pans. Bake for 15-20 minutes or until cake tests done. Cool completely.

For the topping:
Mix topping ingredients together, slowly at first then on high till thick and forms stiff peaks. Add pecans. Frost cake. Refrigerate until served.

Personal Notes:
I make this cake in a bundt pan and omit the pecans I usually make it for Christmas and St. Patrick's Day because it is a beautiful green! Because it is refrigerated it is well received in the summer too!
