Ingredients: 12 slices bacon, medium chopped 12 slices white sandwich bread (remove the crusts) 2 McIntosh or Golden Apples, peeled, cored, thin slices 8 oz. (2 cups) sharp cheddar cheese, shredded 3 cups whole milk 6 large eggs 1 tsp. spicy brown mustard 1/2 tsp. salt 1/4 tsp. pepper 2 tbsp. unsalted butter 1 oz. Parmesan Cheese (grated) 1/2 cup

Directions:Cook bacon until crisp (10 minutes). Cool on paper lined plate. Grease 13 X 9 baking dish Arrange six slices of bread in single layer in prepared baking dish. Cut bread to fit. Spread half of the apples over bread, sprinkle evenly with crisp bacon and cheddar cheese. Top with remaining apples. Arrange remaining bread slices in a single layer over top, cutting bread to fit. Whisk, milk, eggs, mustard, salt and pepper together. Pour over the bread. Press gently on the bread to submerge. Cover with plastic.Refridgerate 8 to 24 hours. Preheat oven to º350. Place the rack in the middle of the oven. Unwrap the strata. Melt the butter and drizzle over the top of the strata. Sprinkle with Parmesan Cheese. Bake for 50 to 60 minutes until the strata is puffed and brown. |

Notes: I usually think of strata for breakfast, but this one is great for a light supper or lunch.
When you letting the strata set to soak, I usually add some full cans or a wrapped brick on the top of the plastic to add weight so everything soaks up nicely.
It will take a lot of room in the fridge, but when I make this in the winter I simply put it in the back seat of my car when it's in the driveway overnight. Sorry, but this does NOT work in the summer months!
