1 or 2 frying chickens, cut up
1 cup flour
1 cup cracker crumbs
1 tsp. salt
1 tsp. paprika
2 eggs beaten
Cooking oil
Additional flour for gravy
Milk

Directions:
Directions:
Wash and pat dry the chicken parts. Mix the flour and crumbs together. Add the salt and paprika. Mix the beaten egg with a little water. Dip the chicken pieces in the flour mixture, then in the egg and back again in the flour. Heat the cooking oil in a large skillet. The oil should be very hot or the chicken will be greasy. Brown the chicken pieces
a few at a time. When all are browned, cover the pan, turn the heat down and cook until done. Uncover the last 10 minutes to allow the chicken to crisp up.

Transfer the chicken to a serving platter. Add flour to the dripping in the pan and stir into a paste. Gradually add the milk and cook until thickened.
