8 med potatoes
3/4 C olive oil
1/4 C red wine vinegar
3 cloves garlic, crushed
1/2 tsp dried red peppers
1 tsp dried basil
1/2 tsp dried oregano
1 tsp salt
1 c black olives pitted
1 T capers drained
1 C celery, sliced
1 red pepper, chopped coarse
1 green pepper, chopped coarse

Directions:
Directions:
Cook potatoes with skins on until almost tender. Whisk oil, vinegar, garlic and seasoning together in large bowl, add remaining ingredients. Drain potatoes, cool until you are able to handle, cut into 3/4" cubes and drop into dressing while hot. Toss and chill.
