2 lbs Yellow Potatoes
3/4 c minced red onion
3/4 c minced celery stalk
2 Tbs minced parsley
salt
pepper
vinegar

vinegrette: 3 Tbs EVOO, 2 Tbs Apple Cider Vinegar, 1/2 tsp sugar S&P

Cook (20 min or until done) potatos, cut into cubes mix aqll the ingredients w/4 Tbs vinegrette and mix with potatos. S&P to taste

I sometimes use chicken broth to cook the tatos in. Also I sometimes slice instead of cube.
