1/2 cup hulled pumpkin seeds (Pepitas)
1 tsp canola oil, plus extra for oiling pan
1/2 tsp. chile powder
1/8 tsp. cayenne pepper (or more or less to taste)
1/2 tsp. kosher salt (or more of less to taste)
1 tsp. finely minced lime zest (about 1 lime)

Preheat the oven to 350º
In a medium bowl toss the pepitas with oil, chile powder, salt and lime zest.
Spread the pepitas onto a lightly oiled baking pan in one single, even layer.
Cooking the preheated oven until golden brown (about 6 to 8 minutes). Stir halfway through the cooking time to promote even browning.
Remove the sheet from the oven, allow the pepitas to cool completely before serving.

I learned this recipe from the Viking Cooking School in Bryn Mawr. I have had pepitas all over Mexico as a pool side or bar snack. These are authentic in taste.
