1/4 C dry white wine
1/4 C fresh lime juice
1 T ginger, peeled and chopped
1 T shallot, minced
1/3 C whipping cream 35% MF
2 T chili-garlic sauce
6 T unsalted butter, cut into 1/2" pieces

Directions:
Directions:
Combine wine, lime juice, ginger and shallot in heavy saucepan. Boil until until reduced by half. Add cream and reduce by half again. Lower heat to low and add chili-garlic sauce. Add butter, 1 piece at a time, whisking just until each piece melts before adding another.
