8 oz. beef kidney, cut into small even sized cubes
2 lb. stew beef (top round or bottom round will also do) cut into even sized cubes
1 medium onion, chopped
3 Tbsp. flour, seasoned with salt and pepper to taste
1 pie crust (Vicky is a master at this already)

Directions:
Directions:
Coat the meat with seasoned flour, put in a large saucepan with onion and a small amount of water.
Simmer for 2 hours until meat is tender.
Preheat the oven to 425ºF.
Transfer to a baking dish (9 x12 casserole).

Top with pie crust pastry.

Bake for 20 min, then reduce heat to 350ºF for 20 minutes longer.

Sprinkle in the flour and lemon rind and stir well.
