6-8 large potatoes
1/2 to 3/4 lb sausage

3 Tbsp. butter
2 1/2 Tbsp. flour
2 c. milk
1 c. grated sharp cheddar cheese
salt & pepper to taste
2 tsp. dried parsley

Directions:
Directions:
Peel & slice potatoes in thin rounds. Boil potatoes with a little salt in water until tender. Drain & put in casserole dish. Fry sausage, drain & place on top of potatoes. Pour cheese sauce on top & bake at 350º for 20 minutes.

Melt butter in fry pan. Blend flour until smooth. Gradually add milk & cook over medium heat until thick. Add cheese & spices. Cook until cheese melts.
