1 c sugar
2/3 c canned pumpkin
¾ c flour
½ tsp cinnamon
1 tsp bakind soda
½ c chopped walnuts
1 c icing sugar
¾ tsp vanilla
2 tbsp butter softened
6 oz cream cheese

Directions:
Directions:
Preheat oven to 375º. Grease 10x15" pan and line with parchment paper. Grease and flour the paper.
In a large bowl, beat eggs on high for 5 minutes. Gradually add sugar and pumpkin. Add flour, cinnamon and baking soda. Spread batter evenly in pan. Sprinkle walnuts evenly on top.
Bake for 15 minutes or until cake springs back when lightly touched. Immediately turn out onto a linen towel dusted with icing sugar. Peel off paper and roll cake up in towel, starting with the short end. Cool
To make filling: Mix icing sugar, vanilla, butter and cream cheese until smooth.
Carefully unroll the cake, spread filling over cake to within 1" of edges. Roll up again, cover and chill until serving. Dust with icing sugar.
