1 tbsp butter
¾ c sugar
3 tbsp flour
¼ tsp baking powder
2 egg yolks
2 tsp grated lemon rind
¼ c lemon juice
1 c scalded milk
2 egg whites
¼ c sugar

Directions:
Directions:
Preheat oven to 325º. Grease a 8x8" cake pan
Cream butter and sugar. Blend in flour and baking soda. Beat egg yolks til thick, add lemon rind and lemon juice, blend into creamed mixture, add milk. Beat egg whites til soft peaks form, add sugar and beat. Fold in creamed mixture. Pour into 8x8" cake pan Place in shallow pan of hot water and bake for 55 minutes.
