Salad:
1 medium cabbage
1 sweet or red onion
(optional) ½ cup grated carrots

Dressing:
3/4 cup vinegar
2/3 cup vegetable oil
1/2 cup sugar (or slightly more)
1 teas. Dry mustard
1 teas. Celery seed (can substitute poppy seed)
(optional)
1 TBS. dried dill weed
1 TBS. salt

Directions:
Directions:
Thinly slice or using food processor julienne cabbage, onion, and carrots.

In a large deep dish, layer cabbage, onion and carrots.

In a saucepan, combine the ingredients for the dressing. Bring to a boil then remove from heat. Immediately pour the hot dressing over the slaw mix. Cover and refrigerate for at least 6 hours. Stir once or twice to make sure the dressing marinates the slaw evenly.

Keeps for 7-10 days.
