Lentil Soup Recipe

6 oz.Chorizo, bacon or salt pork
1 large onion
2 medium chopped carrots
3 cloves of garlic
1 can diced tomatoes (14.5 oz) drained
1 bay leaf
1 teaspoon thyme leaves
1 cup lentils
1 teaspoon salt
Pepper to taste
½ cup white wine
4 ½ cups chicken stock
1 ½ cups water
1 ½ teaspoon balsamic vinegar
3 tablespoons fresh parsley or cilantro
Bread Croutons

Directions:
Directions:
Brown meat, add onion and carrot and cook about 2 minutes.
Then add garlic. Next add tomatoes, bay leaf, and thyme.
Next add lentils, salt, pepper. Cover, reduce heat and cook for 8 to 10 minutes.

Uncover, increase heat to high, add wine and bring to a simmer allowing the alcohol to cook off. Next add water and stock and bring to a light boil.
Stir then simmer for 30 to 35 minutes.

Puree 3 cups of the mixture in a blender and return to the pot.
Add parsley and reduce heat with cover on.

To serve add soup to the bowl, then garnish with a teaspoon of vinegar and a crouton.
