1 lb ground beef
1 lb ground pork
4-6 cloves garlic – crushed and chopped
1-3 Tablespoons fresh chopped peppers (use green or red or for some heat use Jalapenos)
1 medium sweet onion - chopped
2 16 oz. Cans Chili beans
1 16 oz. Can white or black beans (optional)
1 28 oz. Can diced or crushed tomatoes
1 28 oz. Can whole tomatoes (drained)
1 cup red wine
1-3 Bay leaf (whole) or 1 teaspoon ground
1-3 Tablespoons Balsamic vinegar (add right before serving)

Spices: Chili is an art, in my opinion; the quantities are in accordance to your family and friends tastes. If you are unsure or if you are feeding kids, add a pinch of each but go easy on the hot stuff.

To taste Salt, Black pepper, Herbs de Provence, Cumin
To taste Adobo seasoning (hot stuff), Chili Powder (hot stuff), Hot sauce (hot stuff)

Brown meat with garlic, peppers, onion and chili powder. Drain fat.
To a 5-quart or larger crock pot combine the canned tomatoes, beans and Bay leaf(s) and wine with the spices you choose.
Cook for 2-4 hours over high stirring frequently or all day in a slow cooker on low.
Stir in Balsamic vinegar right before serving.

Provencal Chili
This Chili recipe was created when I visited France with Michael & Catherine Tiersten several short weeks after the 9/11 attacks. We were unsure how the locals would treat us. We were delighted by the warm greetings and words of sympathy we received from people all over French. It occurred to me that a combination of the flavors, spices and wines of Southern France (Provence region) combined with traditional American chili flavors could change the world by bringing two cultures together. Well, we didn’t change the world but hope you like this chili.
