Ingredients: boiled ham bone or smoked pork hocks with bone 10 lb bag potatoes, peeled salt pepper cinnamon nutmeg flour

Directions:**Boil ham bone with water to make broth. Place raw potatoes in blender with water to be grated. Strain potatoes after being grated. Add salt, pepper, cinnamon and nutmeg to taste. Add small amount of flour and check dough consistency. Make a ball and if potatoes don't slightly hold shape in palm of hand then add more flour. Be sure to add small amounts of flour at a time because too much flour will make dumplings too hard! ** When dough is of right consistency form into balls/patties, as desired. Place formed dumplings into ham broth and bring to a boil and cover. Carefully lift dumplings to prevent sticking to bottom of pan. Turn down to medium low heat for a slow boil and cover. Dumplings will float to top when done. The longer they boil the better flavor they will retain. Simmer at least an hour and taste to make sure they're done and flavor is as desired. Serve dumplings with a little broth and top with butter, cinnamon and sugar or more nutmeg. |
