A piece of lean beef, cut from round steak

Directions:
Directions:
Using a sharp knife scrape the round steak, against the grain, until nothing is left but connective tissue. Form the meat into a patty and fry in an iron pan.

Pop graduated early from Yale University to serve in the US Army Air Force as a bomber pilot during WW II. Polly and Mary were living with Grama and Bompa at 4014 Sheridan Ave. in Minneapolis. Every night Grama would make Mary a scraped meat patty, in a small square, iron pan, so she would get enough protein. Rations were tight. Mary has, and still uses, that perfectly seasoned little pan.
