2 T. olive oil
1 1/2 c. onions, chopped
2 T. garlic, minced
3 corn tortillas (6 in. size) cut into 1 inch pieces
1 (10.5) ounce can of diced tomatoes with green chilies
4 c. chicken broth
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. dried oregano
1/2 tsp. cayenne pepper
2 c. cooked chicken or turkey, shredded or cubed
1 1/2 c. frozen corn kernels
1/2 c. heavy cream
1 c. Monterey jack cheese, shredded
2 T. lime juice

Heat oil in a large saucepan over medium-high; add onions and garlic, and saute 3 minutes. Stir in tortilla pieces and saute until they begin to soften. Add tomatoes, broth and spices and bring to a boil. Remove from heat; let cool for 5 minutes, then puree soup base in batches in a blender or food processor until smooth. Return soup to pot.

Add chicken/turkey, corn and cream. Bring to a boil and then simmer for 5 minutes or until beginning to thicken. Reduce heat to medium, sprinkle in cheese, and stir until melted. Add lime juice and season with salt and pepper to taste.

May serve with salsa, sour cream, avocado pieces and crispy tortilla strips.

While simmering soup I cut the additional corn tortilla's in strips and quickly fry them in a pan to put on top of soup.

Soup only is 267 calories per cup.
