1 box yellow cake mix
7 minute icing
peppermint candy, crushed

7 Minute Icing:
3 egg whites
1-⅔ cup sugar
1/4 cup white corn syrup
1 dash salt
1 tsp. vanilla extract or fresh lemon juice

Directions:
Directions:
Make the cake following box directions and make in 3 thin layers. When done, let cool. While cake is cooling, make the 7 minute icing. Spread the icing between each layer, top and sides of cake. Sprinkle the crushed peppermint on top and sides of cake. Pat the peppermint into the icing a little. Let sit in the refrigerator for a week before serving. This allows the peppermint to melt into the icing. Icing: In the top of a double boiler over simmering water, cook egg whites, sugar, corn syrup and salt for 7 minutes beating at high speed with an electric mixer. Remove from heat, add vanilla or lemon juice. Continue beating until a spreadable consistency is reached.
