1/2 c. port wine
1 c. freshly squeezed orange juice
1/2 c. freshly squeezed lemon juice
1 c. red currant jelly
1 tsp. dry mustard
1/4 tsp. ground ginger
a few drops Tabasco sauce
1/2 c. finely chopped onion
1 1/2 tbsp. arrowroot or cornstarch
1 tbsp. coarsely grated orange peel
1 tbsp. coarsely grated lemon peel

Directions:
Directions:
Combine port, orange juice, lemon juice, jelly, mustard, ginger, Tabasco and onion. Bring to a boil, cook briefly, and then strain.
Put some of the hot sauce in a cup with the arrowroot, and stir until thickened. Add back into the remaining sauce and cook until thickened and clear. Stir in grated orange and lemon rinds.

This is especially good with the orange stuffing, and also quite nice with other stuffed poultry, such as Rock Cornish Game Hens.
