1 or 2 pie pumpkins
water to microwave pumpkin

3 c. pumpkin for 1-10 inch deep dish pie plate
1 c. sugar
1 1/2 tsp. gr.cinnamon
1 tsp. gr. cloves
1 tsp. gr. allspice
1/2 tsp. gr. ginger
1/2 tsp. vanilla (optional)
1/2 tsp. salt (optional)
4 lg. eggs
16 oz. evaporated milk

Wash exterior of the pumpkin. Cut pumpkin in half. Scrape out seeds and stringy stuff. Remove the stem and place in microwaveable bowl. Put a couple inches of water into bowl, cover and microwave for 20 minutes, then 5 min. increments until soft. Mix pumpkin pulp with a blender until smooth.

Mix all ingredients together with a mixer and pour into a pie crust. Bake at 425º for 15 minutes, then at 350º for 50 to 60 min.
