1 package (8.5oz) corn bread mix
1 tsp minced onion
1/2 tsp cumin
2 eggs
1/3 cup milk
2 tbsp melted butter
3/4 cup mexican cheese

Directions:
Directions:
In small bowl combine mix, onion and cumin. Whisk eggs, milk and 1 tbsp butter. Stir into dry ingredients. Fold in 1/2 cup cheese. Transfer to greased 8" square pan. Bake at 400º for 15 minutes. Brush with remaining butter, sprinkle with remaining cheese and bake 2-4 minutes longer or until cheese is melted and bread is baked.
