Cover beef tongue with cold water. Add several sprigs of parsley, one medium sized onion, quartered, one bay leaf, a large piece of lemon rind, 3 whole cloves & about 10 peppercorns.
Bring to the boiling point & let boil 5 mins.
Then lower heat and simmer until cooked, about 4 hrs.
Serve with Sauce Piquante (see Sauces, Basic Recipes)

The next day Pop would slice the cold, leftover tongue for a zesty sandwich. Two thin slices of Polly's homemade bread, sliced onion, mustard and mayo and perhaps a dollop of horseradish.
