1 1/2 lbs. sweet breads - parboil and break into good sized pieces. Set aside
1/4 lb. dried beef, chopped, saute until it curls
1 tbsp. butter, then add
1 1/2 tbsp. flour
1 1/2 c. light cream & cook until it thickens
1/2 lb. mushrooms, sliced, saute in
1 tbsp. butter, until brown
Add sweet breads to above & pour into a casserole Cover top with buttered bread crumbs & bake at 350º for 1/2 hour

Polly prepared this recipe from T, but especially enjoyed the sweetbreads served at The Oak Room, on Piccadilly in London. On that particular trip, she, Susannah and David were dining out in style and Zanna also thought the dish quite tasty. It helped that Grama didn't tell her what sweetbreads were until they had finished that course.
Sweetbreads are the thymus glands of veal, young beef, lamb & pork. Polly advises to choose sweetbreads that are white, plump and firm.
