4 pig feet, crack bones, cover with warm water (1 qt.). Add juice of 1 lemon, 1 tbsp. of vinegar, 1 sliced onion, 1 bay leaf, 1 or more cloves of garlic, 3 whole cloves, salt and pepper.
Simmer until meat falls off the bones.Taste when nearly done, the liquid should have a sharp flavor. Add more salt & pepper & vinegar if you want. Strain & remove bones. Place meat & stock in mold and chill.

After unmolding, T suggests a garnish of lemon slices and using vinegar as sauce. Serve with plenty of good German lager.
