Cut 8 lamb kidneys in half & soak in milk for 2 hours. Grill 8 slices of bacon & place the crisp slices on absorbent paper in warm place. Pour off all but 2 tbsp. of the fat from the pan & add 2 tbsp. butter. When the butter is melted, add the prepared kidneys to the pan & cook them over a brisk flame until they are browned. Add salt and pepper, 2 tsp. Worchestershire & a few grains of cayenne. Serve with the bacon strips on crisp hot toast.

This was a favorite of T's youngest son, Fritz. It makes a tasty breakfast served with scrambled eggs.
