For Salad:
1 bunch very young, tender mustard greens
1 bunch very young, tender spinach
1 head iceberg lettuce
1 red onion, sliced paper-thin
1 small head cauliflower, separated into small flowerettes

For Dressing:
1/4 cup white wine vinegar
3/4 - 1 cup olive oil
Salt and pepper (to taste)
1 clove garlic, crushed
Lemon juice (1/2 - 1 lemon)
1/2 tsp. sugar

Directions:
Directions:
Combine all dressing ingredients and shake or whisk vigorously. Toss dressing with salad ingredients. Don't drown salad in dressing; keep it light, but flavorful.

Here is a quick never-fail flavor enhancer: 1 bottle capful of olive oil and 3/4 bottle capful of rice vinegar drizzled over salad. Sprinkle sea salt and freshly ground pepper, toss lightly 3-4 times. This light touch keeps greens and vegetables crisp and refreshing! So simple and as good as it gets!
