* 1 (1 1/2 pound) Tender Beef Flank Steak, fat trimmed, thinly sliced crosswise
* Teriaki Marinade
* 3 tablespoons Extra Virgin Olive Oil
* 2 pounds red, yellow, or orange (or a mix) bell peppers
* 1 large onion, sliced
* 12 flour tortillas, warmed
* Fresh Cilantro sprigs (optional)
* Light Sour Cream (optional)

1) Marinate beef steak overnight or at least an hour in Teriaki Marinade.

2) Heat 2 tablespoons oil in a 12-inch nonstick frying pan over medium-high heat. Cook steak until medium (about 10 minutes, cut to test doneness). Let stand.

3) Stem, seed, and cut peppers lengthwise in half. Arrange peppers on a rack in a broiler pan. Baste with remaining marinade. Broil 4 to 6 inches from heat until peppers are charred, about 5 to 7 minutes (check often), and remove when done.

4) Combine remaining oil, onion, and a little marinade in a 12-inch nonstick frying pan over medium-high heat. Stir often until onion is tender, about 7 minutes. Transfer onion mixture to a serving bowl.

5) Cut meat into bite-size pieces, and transfer to a serving bowl. Cut peppers into thin strips, and transfer to a serving bowl.

6) To serve, offer warm tortillas to fill with meat, peppers, onions, cilantro, and sour cream as desired.
