6 T olive oil
3 - 4 T red wine vinegar
1 1/4 tsp salt
2 cloves garlic, minced
ground pepper
1 1/2 C red onion, sliced thin
1 1/2 lbs green or yellow beans
1 - 2 C mild cheddar, grated

Directions:
Directions:
Combine oil, vinegar, salt, garlic and pepper in mixing bowl. Removed ends from beans, leave whole and steam until tender, drain and place in cold water bath until cooled. Add beans to marinate. Place onion in colander, pour 3 cups of boiling water slowly over onions, drain well and add to marinate. Sprinkle with cheese and mix well. Chill before serving
