5 lbs. pork butt (trim fat and cut into thirds)
1 cup soy sauce
2 cups water
1 Tablespoon miso paste
1/4 cup sugar
2 Tablespoons sake
2 Thumb sized pieces of ginger root
3-5 cloves garlic

Directions:
Directions:
In a small saucepan bring soy sauce, water, miso, sugar, and sake to a boil or until sugar and miso are dissolved. Add whole pieces of ginger and garlic. Place pork butt in a slow cooker and pour sauce over the top. Set the slow cooker on high heat for approximately 4 hours, or low heat approximately 6 hours, or until meat is tender and cooked through. Let meat rest in sauce for about a half hour with the lid on then remove the pork from the sauce, cut and serve.
