600 g Israeli Couscous
100 g Onion Brunoise
60 g Butter
1/4 tsp Tumeric
1 tsp Cumin. Ground
1.25 L Hot Chicken Stock
30 ml Vegetable Oil
Salt and Pepper To taste

Directions:
Directions:
1. In a hot, dry pan, toast the couscous until lightly brown, remove from heat and reserve.

2. In a large sauce pan sweat the onions in the butter, add the ground spices and sweat out.

3. Add the couscous to the pan stirring to cover with oil. Season with salt and pepper.

4. Add the hot stock to the pan, bring to boil briefly, cover and remove from heat and allow it to steam out for approximately 30 minutes.
