* 1 lb. lean ground beef
* 1 can (about 14 oz.) beef broth
* 1 sm. green bell pepper, cut into 1/2-inch pieces
* 1/2 cup pimiento-stuffed green olives, sliced
* 1/2 medium onion, chopped
* 2 cloves garlic, minced
* 1 tsp. ground cumin
* 1/2 tsp. dried thyme leaves
* 1 1/3 cups water
* 1 cup uncooked couscous

1) Heat skillet over high heat until hot. Add beef and cook until browned.

2) Drain excess grease.

3) Place broth, bell pepper, olives, onion, garlic, cumin, thyme, and beef in slow cooker.

4) Cover and cook on low 4 hours or until bell pepper is tender.

5) Bring water to a boil over high heat in small saucepan.

6) Stir in couscous, cover and remove from heat. Let stand 5 minutes and then fluff with fork.

7) Spoon couscous onto plate and top with beef mixture.
