3 tbsp. Coleman's dry mustard
3 tbsp. sugar
2 fresh eggs
1/3 c. vinegar
1 c. cream (can use half and half)
1/2 tsp. salt

Directions:
Directions:
Mix everything together well (can use an electric mixer) and put in a double boiler. Cook, stirring, until thickened. If it needs adjusting, you can add a bit more cream, or even a pinch of cayenne. Chill and serve.

Polly has used this recipe often, especially with a good ham, hot or cold. It's more commonly called "Mrs Peddle's Mustard Sauce," though we are not sure who Mrs Peddle was. We do know that she was an acquaintance of T's, and we're grateful for her sauce, which is creamy and rich, with a nice tanginess.
