Ingredients: 6 c. freshly picked strawberries, hulled and slightly crushed 5 c. sugar 1/2 c. lemon juice, freshly squeezed, unstrained

Directions:If you are just learning to can, read ABOUT CANNING at the front of this section before beginning. . Mix berries with sugar and allow to stand about 3 hours, stirring occasionally. Bring to a full boil, and let boil for 7 minutes. Add lemon juice, and boil 7 minutes more, this time skimming froth off the top as needed. Continue boiling - possibly another 45 minutes, if needed - checking frequently for mixture to reach the sheeting stage. This means that when you cool a small amount in a metal spoon and pour it out, it will form a sheet or blob instead of a stream or drops; when fully cooled, it will be the right consistency for preserves. (You can also cool a Tbsp. in the freezer and check consistency that way.) Pour hot preserves into hot sterilized jars and immediately seal with lids and screw tops. Jars will seal without a hot water bath, as long as everything is quite hot when you place the lids on. |

Notes: T got this recipe from Gourmet, and it is some of the best strawberry jam you'll ever taste.You may get frustrated with how long it takes to reach the sheeting stage, but don't give up! Keep checking! It seems to happen suddenly, right when you have decided that it never will. Like many of T's recipes, it can be tricky. Also, these preserves are incredibly tasty on ice cream or a nice fresh cheesecake.
