3 Chicken Thighs
1 Regular or Spicy Brat
2 Cups Whole Grain Instant Rice
1 Jar of your favorite Salsa (I use Organic with Cilantro or Black Bean with Corn)
Chicken Bouillon or Chicken Stock
1 Lemon
Salt
Pepper

Directions:
Directions:
Boil chicken and brat in chicken stock until fully cooked. Cut into square inch pieces and put back into pot. Add entire jar of Salsa and 2 cups of rice. (This can be done in the crockpot at this point or finish on the stove top) add seasonings such as salt and pepper. Cook until rice is tender. Add 1 whole lemon's juice.
