chopped carrots
chopped onion
chopped celery
cheese
mayonnaise
butter
2 T. sour cream
broth (chicken or saved from boiling turkey bones)
turkey (can also be made with chicken)
egg noodles
crackers or corn flakes
poultry seasoning or sage
pepper & salt

Directions:
Directions:
Boil turkey off the bones and save liquid.
Debone turkey and reboil bones in liquid for more flavor.
Cook noodles leaving them a little underdone. Drain and out into casserole dish.
In skillet, Melt butter and add carrots, celery, and onion. Simmer until soft. Add in sour cream, mayonnaise, cheese (any kind), seasonings and broth. Continue adding broth until creamy. Pour over noodles and mix. Top casserole with corn flakes or ground up crackers. Cover dish.
Bake at 350º for 1- 1 1/2 hr. Can tell when done because it gets brown around the edges. Remove cover and continue to bake until top is golden brown.

I like to make this with leftovers from Thanksgiving, but can be made anytime. I also use left over cheese and crackers from the cheese plate and left over veggies from the veggie plate from thanksgiving.
