Water, sugar and vinegar: equal parts
Beets, green tops cut off
Onions, thinly sliced (opt)
Cloves (opt)

If you are just learning to can, read ABOUT CANNING at the front of this section before beginning. .
Cook several beets, then peel them, slice them, and put them in sterilized pint canning jars. Place a slice of onion and a few cloves into each jar as desired. Heat the water, vinegar and sugar together until the sugar is dissolved and the brine is boiling hot. . Pour the brine over the beets to cover, screw on lids, and submerge the jars in boiling water for 10 minutes to seal.

Another one of T's great pickling recipes! These are also quite nice if you add a pinch of crushed red pepper flakes into each jar along with the onion and cloves.
