3 cups diced cooked potatoes
1/4 cup finely chopped celery
1 medium carrot
1/2 cup of green pepper
1/4 cup red onion

2 chopped hard-cooked eggs
6-8 small olives, green or ripe, chopped

1/2 cup mayonnaise
1 Tbs Dijon mustard
2 Tbs olive oil
1 Tbs vinegar, balsamic
2 Tbs pimento, chopped
2 Tbs chopped sweet pickles (I buy them already cubed)
Salt & pepper to taste

Directions:
Directions:
Boil together celery, carrot, green pepper and onion in just enough water to cover, al dente, drained. Combine this mixture, potatoes, eggs and olives in a mixing bowl. Mix remaining ingredients together in a small bowl and pour over other ingredients and mix well. I use a rubber spatula to minimize breaking up the potato cubes. Smooth the surface and sprinkle with paprika. Chill
