3 lbs pears, peel, core and finely shred (4 cups)
Juice from 1 lemon (2 Tbsps) 1/2 tsp margarine
5 cups sugar 1 box sure gel

Prepare jars & screw bands. In 6 or 8 qt saucepot, add fruit & pectin and margarine. Bring mixture to a full rolling boil on a high heat until id doesn't stop bubbling when stirred. Stirring constantly. Stir in sugar quickly and return to full rolling boil. Boil 1 minute stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle into prepared jars (quickly). Fill to within 1/8" of tops. Wipe jar rims and threads. Cover with flat lids. Screw bands tightly. Invert jars for 5 minutes then turn upright. After jars cool check seals by pressing middle of lid with finger. If lid is not sealed, refrigerate.

I made this once when we were living in Tar Heel. Thad had brought home a bag of pears someone had given him. I wasn't sure what to do with them, so I tried this. I gave a jar to our neighbor, Raymond Bedsole. He came back for another jar. He said it was just like his mother made...and I think he really meant it. I took that as the ultimate compliment. I wasn't even sure what to call it, but Raymond called it marmalade.
