1 lb ground turkey (or ground beef)
1/2 cup finely chopped onions
1 egg
12 Saltine crackers finely crushed (about 1/2 cup - we used Italian Bread Crumbs though, just as good)
1 1/2 cups finely shredded cheese
1 cup Salsa (whatever you like) divided

Directions:

Heat Oven to 400º

Mix First 4 ingredients (ground turkey, onions, egg and bread crumbs/crackers) with 1 cup of cheese and 1/2 cup of the salsa.

Press the mixture into muffin tins sprayed with cooking spray, making an indentation in the center of each one.

Bake 20-25 minutes or until meat is cooked through (160º)

Top with remaining salsa and cheese then bake an additional 3 minutes or until melted.
