2 chicken breasts(6-8 oz. each) (4halves)
1/2 c. flour
salt and pepper to taste
2T. butter
2T. salad oil
1/2 c.sliced onion(use extra)
1/2 c.sliced celery(use extra)
1/2 c. sherry wine
juice of 1/2 lemon
1/2 tsp. parsley and marjoram
1/4 tsp. oregano and rosemary
approximately 1 1/2 c. chicken stock
4oz.can mushrooms undrained(I use 12oz.fresh mushrooms and cook last 30 mins.)

Bone and skin chicken, cut into strips, dredged in seasoned flour and saute in butter and oil. Remove and place in heavy skillet or baking dish. To hot oil add celery and onion and cook until tender. Add, sherry, lemon juice and all seasonings. Simmer 3 minutes and add to chicken. Cover chicken 3/4 way with chicken stock and place covered in 300º oven. Bake1 1/4 hours. Remove from oven, add mushrooms; bake uncovered 15 minutes longer. Serves 2 generously. Best when served with rice. This recipe is great doubled.
