Patties:
1 14oz. pink or red salmon
1 egg
1 small onion, minced
1/2 tsp. garlic powder
1/4 c. milk
1/4 c. bread crumbs
1/4 c. olive oil for frying, add if needed
White Sauce:
11/2 tbsp. flour
2 tbsp. butter
1 c. milk, scalded
1/4 tsp. salt
pepper to taste
1 package frozen peas

Patties:
Flake salmon, add egg, onion, garlic powder, milk & bread crumbs. Mix well. Form into 5 patties.

Place olive oil in skillet and heat. Place patties in skillet and fry until golden brown on both sides.

White Sauce:
Melt butter and remove from heat before it browns. Add flour and cook until it bubbles. Pour on half of the hot scalded milk and boil, adding remaining milk, salt & pepper. Use more flour if thicker sauce is desired. Add peas and mix.

To serve pour white sauce with peas over salmon patties.
