10 cloves minced garlic
20 Lg Sea Scallops
salt and pepper
2 Tbsp. butter
1/4c. Rum
1/4c. OJ
1/4c. dry champagne
3 Tbsp. chopped shallots
3 Tbsp. fresh chopped chives
2 Tbsp. butter

Directions:
Directions:
-Combine garlic with enough water to cover in saucepan. Bring to boil and drain. Return to pan and add a little bit of water to garlic again. Set aside.
-Sprinkle salt and pepper onto dry scallops. Saute in 2 Tbsp. butter and cook in high heat for 2- 3 mins on each side. Transfer scallops to dish and tent with aluminum foil.
-Stir in OJ and Rum into garlic. Bring to boil. Boil for 3 mins. or until it comes to a glaze like texture. Add champagne, shallots, and 2 Tbsp. of chives and mix well. Boil for 2-4 mins. Stir frequently and melt in 2 Tbsp. butter until melted. Season with salt and pepper. Drizzle over Scallops and sprinkle on remaining chives. Enjoy!!

We found this recipe at the beach one year, and it has become a family favorite of ours!!
* When cooking the scallops, I use a regular frying pan, NOT a non stick pan. It really helps to get a nice sear onto the scallop.
